Vegan Impossible Meatloaf

a classic comfort dish. This recipe, featuring a vegan ground meat substitute like Impossible Burger or Beyond Meat, offers a twist on traditional meatloaf.
The combination of onions, carrots, and celery imparts a medley of flavors and texture. Garlic, tomato paste, soy sauce, herb blend contribute to the meatloaf’s robust and savory profile. The flax egg, created by combining flaxseed meal with water, acts as binding agent, allowing the meatloaf to hold its shape during baking.
A finishing touch of ketchup glaze enhances both the visual appeal and flavor profile of the dish.
Ingredients:
1 package (about 1 lb) of Impossible Burger
/any plant-based ground meat substitute
1 C breadcrumbs
1 C finely chopped onions
1/2 C finely chopped carrots
1/2 C finely chopped celery
3 cloves garlic, minced
1/4 C tomato paste
2 Tbs soy sauce or tamari
1 Tbs vegan Worcestershire sauce
1 Tbs Dijon mustard
1 tsp dried thyme
1 teaspoon dried oregano
1 tsp dried basil
Salt and pepper to taste
1/2 C vegetable broth
1/4 C ketchup (for topping)
Preheat oven 375°F (190°C). Grease loaf pan, set it aside.
In large mixing bowl,
combine Impossible Burger, breadcrumbs, chopped onions, carrots, celery, minced garlic.
In separate small bowl, whisk together tomato paste, soy sauce, vegan Worcestershire sauce, Dijon mustard, dried thyme, dried oregano, dried basil, salt, pepper.
Pour wet mixture over the Impossible Burger + breadcrumb mix. Mix everything together until well combined.
Add vegetable broth to the mixture and continue to mix until you achieve a moist and well-incorporated texture.
Transfer the mixture into the greased loaf pan, pressing it down to create an even layer.
Spread ketchup over the top of the meatloaf for a classic glaze.
Bake in the preheated oven for 45-50 minutes or until the top is browned and meatloaf is cooked through.
Allow loaf to cool a few minutes before slicing.
Serve slices of the vegan Impossible Meatloaf with your favorite sides, such as mash / steamed veg.
