Sandor Katz is a gay Jew with HIV but his book "The Art of Fermentation" is a gem. It's a guide to the most commonly fermented foods and drinks. My physical copy is still in storage but I took screenshots from a PDF of the milk kefir chapter for a friend recently and wanted to share them here.
